  • 2 large eggs

  • 1 cup ginger ale
  • 1 cup whipped topping (for serving)
  • 1 tablespoon crystallized ginger, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.
  3. In another bowl, cream the sugar and softened butter until light and fluffy. Add the milk, eggs, grated ginger, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared baking pan and smooth the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
