Description
A delightful and moist Ginger Poke Cake infused with ginger ale, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 tablespoon fresh ginger, grated
- 1 tablespoon vanilla extract
- 1 cup ginger ale
- 1 cup whipped topping (for serving)
- 1 tablespoon crystallized ginger, chopped (for garnish)
Instructions
- Preheat the oven to 350°F. Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.
- In another bowl, cream the sugar and softened butter until light and fluffy. Add the milk, eggs, grated ginger, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool for about 10 minutes. Using the handle of a wooden spoon, poke holes all over the top of the cake.
- Pour the ginger ale evenly over the cake, allowing it to soak into the holes. Let the cake cool completely.
- Once cooled, top with whipped topping and sprinkle with chopped crystallized ginger before serving.
Notes
- For a spicier kick, add an extra teaspoon of ground ginger to the batter.
- You can substitute the ginger ale with a flavored sparkling water for a lighter option.
