Ingredients

  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine grated ginger, minced garlic, soy sauce, honey, rice vinegar, sesame oil, black pepper, salt, and red pepper flakes. Mix well to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. In a separate bowl, whisk together the flour, cornstarch, and baking powder.
  4. Remove the chicken from the marinade and let any excess drip off. Dredge each piece in the flour mixture, ensuring an even coating.
  5. In a large skillet or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
  6. Carefully add the coated chicken thighs to the hot oil, skin side down. Fry in batches if necessary to avoid overcrowding. Cook for about 7-8 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
