Ingredients
- 2 pounds chicken thighs, bone-in, skin-on
- 1 tablespoon fresh ginger, grated
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- Vegetable oil, for frying
Instructions
- In a large bowl, combine grated ginger, minced garlic, soy sauce, honey, rice vinegar, sesame oil, black pepper, salt, and red pepper flakes. Mix well to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- In a separate bowl, whisk together the flour, cornstarch, and baking powder.
- Remove the chicken from the marinade and let any excess drip off. Dredge each piece in the flour mixture, ensuring an even coating.
- In a large skillet or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
- Carefully add the coated chicken thighs to the hot oil, skin side down. Fry in batches if necessary to avoid overcrowding. Cook for about 7-8 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
- Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.
- Serve hot, garnished with chopped green onions or sesame seeds if desired.
Notes
- For extra crunch, double-dip the chicken by dipping it back into the marinade after the first coating of flour and then re-coating it in the flour mixture.
- Try adding a teaspoon of five-spice powder to the flour mixture for an additional layer of flavor.
