Description

A delicious and easy recipe for Ginger Soy Glazed Cod that is perfect for a quick weeknight dinner.

Ingredients

  • 1 pound cod fillets
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, rice vinegar, sesame oil, and cornstarch until well combined.
  2. Place the cod fillets in a shallow dish and pour the marinade over the fish, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
  4. Remove the cod from the marinade and place the fillets on the prepared baking sheet. Reserve the marinade for later use.
  5. Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  6. While the cod is baking, pour the reserved marinade into a small saucepan and bring it to a simmer over medium heat. Cook for about 3-5 minutes, or until slightly thickened.
  7. Once the cod is done, drizzle the thickened glaze over the fillets and garnish with chopped green onions and sesame seeds before serving.

Notes

  • For a spicy kick, add a teaspoon of sriracha or red pepper flakes to the marinade.
  • Serve the ginger soy glazed cod over steamed rice or quinoa, and pair it with sautéed vegetables for a complete meal.
