A delicious and easy recipe for Ginger Soy Glazed Cod that is perfect for a quick weeknight dinner.
Ingredients
- 1 pound cod fillets
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, rice vinegar, sesame oil, and cornstarch until well combined.
- Place the cod fillets in a shallow dish and pour the marinade over the fish, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
- Remove the cod from the marinade and place the fillets on the prepared baking sheet. Reserve the marinade for later use.
- Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the cod is baking, pour the reserved marinade into a small saucepan and bring it to a simmer over medium heat. Cook for about 3-5 minutes, or until slightly thickened.
- Once the cod is done, drizzle the thickened glaze over the fillets and garnish with chopped green onions and sesame seeds before serving.
Notes
- For a spicy kick, add a teaspoon of sriracha or red pepper flakes to the marinade.
