A festive dessert recipe for Gingerbread Pudding Cake that is perfect for the holiday season.
Ingredients
- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsulfured molasses
- 1/2 cup whole milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup hot water
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, whisk together the flour, brown sugar, ginger, cinnamon, nutmeg, baking soda, and salt until well combined.
- In another bowl, mix the molasses, milk, melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gradually stir in the hot water until the batter is smooth. The batter will be thin.
- Pour the batter into the prepared baking dish.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for about 10 minutes before serving.
Notes
- For a richer flavor, serve with whipped cream or vanilla ice cream.
- To make it a bit spicier, add an extra teaspoon of ground ginger or a pinch of cayenne pepper for a kick.
