Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring water to a boil. Add the sweet potato cubes and cook for about 10 minutes, or until just tender. Drain and set aside.
  3. In a large oven-safe skillet or baking dish, melt the butter over medium heat.
  4. Stir in the brown sugar, water, cinnamon, nutmeg, salt, and vanilla extract. Cook for about 2-3 minutes until the mixture is smooth and bubbly.
  5. Add the cooked sweet potatoes to the skillet, gently stirring to coat them in the glaze.
  6. If using, sprinkle the chopped pecans on top.
  7. Transfer the skillet or baking dish to the preheated oven and bake for 25-30 minutes, stirring occasionally, until the sweet potatoes are caramelized and tender.
