Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/2 cup water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, bring water to a boil. Add the sweet potato cubes and cook for about 10 minutes, or until just tender. Drain and set aside.
- In a large oven-safe skillet or baking dish, melt the butter over medium heat.
- Stir in the brown sugar, water, cinnamon, nutmeg, salt, and vanilla extract. Cook for about 2-3 minutes until the mixture is smooth and bubbly.
- Add the cooked sweet potatoes to the skillet, gently stirring to coat them in the glaze.
- If using, sprinkle the chopped pecans on top.
- Transfer the skillet or baking dish to the preheated oven and bake for 25-30 minutes, stirring occasionally, until the sweet potatoes are caramelized and tender.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a spicier flavor, add a pinch of cayenne pepper to the glaze.
- You can substitute maple syrup for brown sugar for a different sweetness profile.
