Ingredients

  • Mini sweet bell peppers (16, halved and deseeded)
  • Goat cheese (8–10 oz, softened)
  • Shallots (2, minced)
  • Green onion (1, diced)
  • Basil leaves (15–18, chopped)
  • Garlic (2 cloves, minced)

Honey (1½–2 tbsp)


Instructions

1.       Preheat Oven: Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.

2.       Prepare Peppers: Wash and dry the peppers, then slice them in half lengthwise and remove the seeds and membranes.

3.       Make Filling: In a bowl, mix goat cheese, shallots, green onion, basil, and garlic until well combined.

4.       Stuff Peppers: Fill each pepper half with the goat cheese mixture and press gently to secure the filling.

5.       Bake: Arrange the stuffed peppers cut side up on the sheet pan. Bake for 20 minutes, or until the peppers are tender and the cheese is golden.

6.       Drizzle Honey: While warm, drizzle with honey for a sweet finishing touch. Serve immediately.
