Ingredients

  • 1 large head of cauliflower
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  2. Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. You should get about 4-6 steaks depending on the size of the cauliflower.
  3. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Brush both sides of each cauliflower steak with the olive oil mixture and place them on the prepared baking sheet.
  5. Roast the cauliflower steaks in the preheated oven for 20 minutes.
  6. Remove the baking sheet from the oven and sprinkle the cheddar and Parmesan cheese evenly over the cauliflower steaks.
  7. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the cheese is melted and bubbly and the cauliflower is tender and golden brown.
  8. Garnish with chopped parsley before serving.
