Delicious gourmet garlic zucchini steaks topped with melted cheese, perfect for a healthy and flavorful dish.
Ingredients
- 2 large zucchinis
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis lengthwise into 1/2-inch thick steaks.
- In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, oregano, and red pepper flakes.
- Brush both sides of the zucchini steaks with the garlic oil mixture and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15 minutes.
- Remove the zucchini from the oven and sprinkle the mozzarella and Parmesan cheeses evenly over the top of each steak.
- Return the zucchini to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a smoky flavor, grill the zucchini steaks instead of baking them.
- Add sliced tomatoes or bell peppers on top of the zucchini before adding cheese for extra flavor and nutrition.
