Granola Yogurt Cups with Fresh Fruit are a delicious and healthy treat, perfect for breakfast or a snack.
Ingredients
- 2 cups granola
- 2 cups plain Greek yogurt
- 2 cups mixed fresh fruit (such as strawberries, blueberries, and bananas)
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract (optional)
- 1/4 cup chopped nuts (such as almonds or walnuts, optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract if using. Stir until well combined.
- In serving cups or bowls, layer 1/4 cup of granola at the bottom.
- Add a layer of 1/2 cup of the yogurt mixture on top of the granola.
- Add a layer of 1/2 cup of mixed fresh fruit on top of the yogurt.
- Repeat the layers until the cups are filled, finishing with a layer of fruit on top.
- Sprinkle chopped nuts over the top if desired, and garnish with fresh mint leaves.
- Serve immediately or refrigerate for up to 1 hour before serving for a chilled treat.
Notes
- For a dairy-free version, use coconut yogurt or almond yogurt instead of Greek yogurt.
- Customize the fruit based on the season; try peaches in summer or apples in fall for a different flavor profile.
