Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 1 cup cherry tomatoes, halved
  • 1 red onion, cut into wedges
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Whisk until well blended.
  3. Add the chicken thighs to the bowl and toss to coat them in the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. In a large baking dish or tray, arrange the halved baby potatoes, cherry tomatoes, red onion, and bell pepper. Drizzle with a little olive oil and season with salt and pepper. Toss to combine.
  5. Place the marinated chicken thighs on top of the vegetables in the baking dish.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature of the chicken should reach 165°F (75°C).
  7. Remove from the oven and sprinkle crumbled feta cheese over the top. Return to the oven for an additional 5 minutes to warm the feta.
  8. Garnish with fresh parsley before serving.

Notes

  • For added flavor, consider marinating the chicken overnight.
  • You can substitute the chicken thighs with chicken breasts or drumsticks if preferred. Adjust cooking time as needed.
