Ingredients

  • Boneless, skinless chicken thighs (8–10 pieces)
  • 1 cup Greek yogurt (plain, full-fat)
  • 34 sprigs fresh dill (chopped)
  • 1 shallot (minced)
  • 3 tbsp garlic (minced)
  • 1 lemon (juiced and zested)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp dried oregano

Instructions

1.     Prepare the Chicken:

    • Pat the chicken thighs dry with a paper towel and set aside.

2.     Make the Marinade:

    • In a large mixing bowl, combine Greek yogurt, dill, shallot, garlic, lemon juice, lemon zest, salt, pepper, paprika, and oregano. Mix well.

3.     Marinate the Chicken:

    • Add the chicken to the bowl, ensuring all pieces are well-coated. Cover and refrigerate for at least 1 hour (preferably overnight).

4.     Heat the Grill:

    • Preheat the grill to 400°F and lightly oil the grates.

5.     Grill the Chicken:

    • Place marinated chicken thighs on the grill, smooth side down. Discard any excess marinade.
    • Cook for 8–10 minutes, flipping halfway, until the internal temperature reaches 165°F.

6.     Rest and Serve:

    • Let the chicken rest for 5 minutes under foil before serving.
