Ingredients

  • 1 pound fresh green beans, trimmed
  • 8 slices bacon
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce

  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large pot of boiling salted water, blanch the green beans for 3-4 minutes until bright green and slightly tender. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.
  3. Take 4-5 green beans and bundle them together. Wrap a slice of bacon around the bundle, securing it with a toothpick if necessary. Repeat with the remaining green beans and bacon.
  4. In a small bowl, mix together the brown sugar, soy sauce, garlic powder, black pepper, and red pepper flakes if using.
  5. Place the bacon-wrapped green bean bundles in a baking dish. Drizzle the soy sauce mixture over the bundles, ensuring they are well coated.
  6. Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and caramelized, turning the bundles halfway through for even cooking.
  7. Remove from the oven and let cool for a few minutes before serving.
