Ingredients

  • 1 pound fresh green beans, trimmed
  • 4 ounces bacon, chopped
  • 8 ounces fresh mushrooms, sliced (such as button or cremini)
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain.
  3. In the same skillet with the bacon fat, add the sliced mushrooms. Sauté for about 5 minutes until they are browned and tender.
  4. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  5. Stir in the blanched green beans and cooked bacon. Drizzle with olive oil, season with salt and pepper, and toss to combine. Cook for another 2-3 minutes until heated through.
  6. If desired, add lemon juice for brightness and toss again. Garnish with chopped parsley before serving.
