A delicious side dish featuring fresh green beans, crispy bacon, and sautéed mushrooms, perfect for any meal.
Ingredients
- 1 pound fresh green beans, trimmed
- 4 ounces bacon, chopped
- 8 ounces fresh mushrooms, sliced (such as button or cremini)
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
- Fresh parsley, chopped for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.
- In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain.
- In the same skillet with the bacon fat, add the sliced mushrooms. Sauté for about 5 minutes until they are browned and tender.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Stir in the blanched green beans and cooked bacon. Drizzle with olive oil, season with salt and pepper, and toss to combine. Cook for another 2-3 minutes until heated through.
- If desired, add lemon juice for brightness and toss again. Garnish with chopped parsley before serving.
Notes
- For a smoky flavor, try adding a pinch of smoked paprika while sautéing the mushrooms.
- Substitute turkey bacon for a lighter version or use sautéed onions instead of bacon for a vegetarian option.
