Ingredients
-
4 boneless, skinless chicken breasts
-
1 cup grated Parmesan cheese
-
4 cloves garlic, minced
-
2 tablespoons olive oil
-
1 teaspoon dried basil
-
1 teaspoon dried oregano
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
1 tablespoon fresh parsley, chopped (for garnish)
-
Wooden or metal skewers (soak wooden skewers for 30 minutes if using)
Instructions
-
Preheat your oven to 375°F (190°C).
-
Cut chicken breasts into 1-inch cubes and set aside.
-
In a medium bowl, mix together the Parmesan cheese, minced garlic, olive oil, dried basil, dried oregano, salt, and black pepper.
-
Add the chicken cubes to the bowl and toss until each piece is evenly coated with the Parmesan herb mixture.
-
Thread the seasoned chicken pieces onto skewers, leaving a small space between each piece.
-
Arrange the skewers on a baking sheet lined with parchment or foil.
-
Bake for 25 to 30 minutes, or until the chicken is golden brown and cooked through (internal temp should reach 165°F).
-
Garnish with chopped fresh parsley before serving. Serve hot with dipping sauce if desired.
Notes
-
These skewers can also be grilled over medium heat for a smoky finish—about 10–12 minutes total, turning once.
-
Great as a low-carb appetizer or main dish.
-
Try with a side of marinara, ranch, or garlic aioli for extra flavor.
-
Leftovers store well in the fridge for up to 3 days—reheat in the oven or air fryer for best texture.
-
You can substitute the chicken with pork tenderloin or large shrimp (adjust cooking time accordingly).
