Description

Grilled Cod with Roasted Tomatoes and Creamy Dill Sauce is a delicious and healthy dish that combines tender cod fillets with sweet roasted tomatoes and a flavorful creamy dill sauce.


Ingredients

  • 1 pound cod fillets
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, pepper, and garlic powder.
  3. Spread the tomatoes out on a baking sheet and roast in the oven at 400°F for about 15-20 minutes, or until they are blistered and soft.
  4. While the tomatoes are roasting, brush the cod fillets with the remaining tablespoon of olive oil and season with salt and pepper.
  5. Place the fillets on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.
  6. In a separate bowl, mix together the sour cream, dill, lemon juice, and Dijon mustard until well combined.
  7. Once the cod is cooked and the tomatoes are roasted, serve the cod topped with the roasted tomatoes and a generous drizzle of the creamy dill sauce.
