Ingredients
- 2 pounds lamb chops (about 8 chops)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, zested and juiced
Instructions
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, black pepper, lemon zest, and lemon juice. Whisk until well combined.
- Add the lamb chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Preheat your grill to medium-high heat. Remove the lamb chops from the marinade and let them sit at room temperature for about 15 minutes before grilling.
- Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer to check for an internal temperature of 145°F for medium-rare.
- Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes before serving.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
