Description

Grilled Mediterranean Veggie Quesadillas are a delicious and healthy option packed with grilled vegetables and melted cheese, perfect for a quick meal.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • Cooking spray or additional olive oil for grilling

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. In a large bowl, combine the sliced zucchinis, bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, then sprinkle with oregano, garlic powder, salt, and pepper. Toss to coat the veggies evenly.
  3. Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from heat and let cool slightly.
  4. Lay one tortilla on a clean surface. On half of the tortilla, layer a portion of the grilled veggies, followed by a sprinkle of feta and mozzarella cheese. Fold the tortilla in half to cover the filling.
  5. Lightly spray the grill or grill pan with cooking spray or brush with olive oil. Place the quesadilla on the grill and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  6. Remove from the grill and let cool for a minute before slicing into wedges. Repeat with the remaining tortillas and filling.
  7. Serve warm with your favorite dipping sauce, such as tzatziki or salsa.
