Ingredients
- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup salsa verde
- 4 ounces pepper jack cheese, shredded
- Fresh cilantro, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture evenly over both sides of the chicken breasts.
- Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- During the last few minutes of grilling, spoon salsa verde over the chicken and sprinkle the shredded pepper jack cheese on top. Close the grill lid to melt the cheese, about 2-3 minutes.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Garnish with fresh cilantro if desired and serve with lime wedges.
Notes
- For a spicier kick, add sliced jalapeños to the salsa verde before grilling.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
