Grilled Zucchini Rolls with Microgreens are a delicious and healthy appetizer or side dish, featuring grilled zucchini filled with a creamy cheese mixture and topped with fresh microgreens.
Ingredients
- 2 medium zucchinis
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup microgreens (such as arugula or radish)
- 1 tablespoon balsamic glaze (optional)
Instructions
- Preheat the grill to medium heat. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
- In a bowl, combine the ricotta cheese, grated Parmesan cheese, garlic powder, salt, and black pepper. Mix until well combined.
- Brush both sides of the zucchini strips with olive oil. Grill the zucchini strips for about 2-3 minutes on each side, or until they are tender and have grill marks.
- Remove the zucchini from the grill and let it cool slightly. Spread a thin layer of the cheese mixture on one side of each zucchini strip.
- Place a small handful of microgreens on top of the cheese mixture. Roll the zucchini strips tightly from one end to the other.
- Secure the rolls with toothpicks if necessary. Drizzle with balsamic glaze before serving, if desired.
Notes
- For added flavor, mix in some chopped fresh herbs like basil or parsley into the cheese mixture.
- Substitute the ricotta cheese with goat cheese for a tangy twist.
