Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup microgreens (such as arugula or radish)
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat the grill to medium heat. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  2. In a bowl, combine the ricotta cheese, grated Parmesan cheese, garlic powder, salt, and black pepper. Mix until well combined.
  3. Brush both sides of the zucchini strips with olive oil. Grill the zucchini strips for about 2-3 minutes on each side, or until they are tender and have grill marks.
  4. Remove the zucchini from the grill and let it cool slightly. Spread a thin layer of the cheese mixture on one side of each zucchini strip.
  5. Place a small handful of microgreens on top of the cheese mixture. Roll the zucchini strips tightly from one end to the other.
  6. Secure the rolls with toothpicks if necessary. Drizzle with balsamic glaze before serving, if desired.
