Ingredients

For the Filling:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 can (4 oz) diced green chilies (optional)
  • Salt and pepper, to taste
  • 1 can (10 oz) enchilada sauce (red or green)

For Assembly:

  • 1012 corn tortillas
  • 2 cups shredded cheddar cheese

Optional Garnishes:

  • 1/2 cup sour cream
  • Fresh cilantro, chopped

Instructions

  • Prepare the Beef Filling:
    • Heat a large skillet over medium heat.
    • Add the ground beef and cook until browned, breaking it up as it cooks.
    • When the beef is halfway cooked, add the onion and garlic. Cook until the onion is soft and the beef is fully browned. Drain excess fat.
  • Season the Filling:
    • Stir in cumin, chili powder, paprika, and diced green chilies (if using).
    • Add salt and pepper to taste.
    • Pour in half of the enchilada sauce and stir until the beef mixture is evenly coated.
  • Soften the Tortillas:
    • Heat each tortilla in a dry skillet or microwave for a few seconds until pliable.
  • Assemble the Enchiladas:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
    • Place a scoop of beef filling in the center of each tortilla. Add a small handful of shredded cheese. Roll the tortilla tightly and place seam-side down in the baking dish. Repeat with remaining tortillas.
  • Top and Bake:
    • Pour the remaining enchilada sauce over the rolled tortillas, spreading it evenly.
    • Sprinkle the remaining shredded cheese on top.
    • Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  • Serve and Garnish:
    • Remove the enchiladas from the oven and let them cool for a few minutes.
    • Garnish with sour cream and fresh cilantro, if desired. Serve warm and enjoy!
