Ingredients

  • 2 tablespoons olive oil (divided)
  • 16 ounces mushrooms, stemmed and sliced
  • 3 cloves garlic, minced
  • 1 pound ground beef (grass-fed preferred)
  • 1/3 cup white wine (optional)
  • 4 cups beef broth
  • 8 ounces wide egg noodles
  • 1/2 cup sour cream
  • 1/4 cup freshly chopped chives (optional)
  • Salt and pepper to taste

Instructions

  1. Sauté the Mushrooms
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the mushrooms and a pinch of salt. Cook for 4–5 minutes until browned and the liquid has evaporated. Transfer mushrooms to a bowl and set aside.
  2. Cook the Ground Beef
    • In the same skillet, heat the remaining olive oil. Add the ground beef and cook until no longer pink, about 3–4 minutes, breaking it into small pieces. Stir in the minced garlic and cook for an additional 30 seconds. Drain excess grease.
  3. Add Liquid and Noodles
    • Deglaze the skillet with white wine (if using), scraping up any browned bits. Add the beef broth and bring to a boil. Stir in the egg noodles, reduce the heat, and simmer uncovered for 10–12 minutes until the noodles are tender and most of the liquid is absorbed.
  4. Combine Ingredients
    • Return the sautéed mushrooms to the skillet. Remove from heat and stir in the sour cream until smooth and creamy. Season with salt and pepper to taste.
  5. Serve
    • Garnish with chopped chives if desired. Serve immediately and enjoy!
