Description
A delicious and healthy Ground Turkey Zucchini Casserole that is easy to make and perfect for a family meal.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 2 medium zucchinis, sliced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and cooked through, about 6-8 minutes.
- Stir in the sliced zucchini, diced tomatoes (with juice), oregano, basil, salt, and black pepper. Cook for an additional 5 minutes, allowing the zucchini to soften slightly.
- Transfer the turkey and zucchini mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the turkey mixture.
- You can substitute ground turkey with ground chicken or lean beef for a different flavor profile.
