Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and cooked through, about 6-8 minutes.
  4. Stir in the sliced zucchini, diced tomatoes (with juice), oregano, basil, salt, and black pepper. Cook for an additional 5 minutes, allowing the zucchini to soften slightly.
  5. Transfer the turkey and zucchini mixture to a greased 9×13-inch baking dish.
  6. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
