Description

Ingredients

  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the cooled mashed potatoes, diced ham, shredded cheddar cheese, and chopped green onions. Mix until well combined.
  2. Add the flour, egg, garlic powder, black pepper, and salt to the potato mixture. Stir until everything is evenly incorporated.
  3. Form the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick.
  4. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the potato cakes in batches, being careful not to overcrowd the pan.
  5. Fry each side for about 4-5 minutes or until golden brown and crispy. Flip carefully using a spatula.
  6. Once cooked, transfer the cakes to a paper towel-lined plate to drain excess oil. Serve warm.
