Ingredients

  • 2 cups cheese tortellini
  • 1 cup diced ham
  • 1 cup diced pineapple (fresh or canned, drained)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced green onions
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the diced ham, pineapple, cherry tomatoes, red bell pepper, and green onions.
  3. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth.
  4. Add the cooled tortellini to the bowl with the ham and vegetables. Pour the dressing over the top and gently toss to combine until everything is well coated.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
