Description
A refreshing and tropical Hawaiian Tortellini Pasta Salad that combines cheese tortellini with ham, pineapple, and a creamy dressing.
Ingredients
- 2 cups cheese tortellini
- 1 cup diced ham
- 1 cup diced pineapple (fresh or canned, drained)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red bell pepper
- 1/4 cup sliced green onions
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large mixing bowl, combine the diced ham, pineapple, cherry tomatoes, red bell pepper, and green onions.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth.
- Add the cooled tortellini to the bowl with the ham and vegetables. Pour the dressing over the top and gently toss to combine until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, garnished with additional green onions if desired.
Notes
- For a vegetarian option, replace the ham with diced cucumbers or additional vegetables like bell peppers and carrots.
- Add a sprinkle of toasted coconut or chopped macadamia nuts for a tropical crunch.
