Ingredients
- 8 ounces cheese tortellini
- 1 cup diced pineapple (fresh or canned)
- 1 cup diced red bell pepper
- 1 cup diced cucumber
- 1/2 cup sliced green onions
- 1/2 cup shredded carrots
- 1/2 cup diced cooked ham
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large mixing bowl, combine the diced pineapple, red bell pepper, cucumber, green onions, shredded carrots, and diced ham.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, garlic powder, salt, and pepper until smooth.
- Add the cooled tortellini to the vegetable and ham mixture. Pour the dressing over the top and gently toss until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 1-2 hours.
- Serve chilled, garnished with additional green onions if desired.
