- 2 ripe bananas (mashed)
- 1 ½ cups old-fashioned oats
- ½ cup dark chocolate chips
- ¼ cup almond butter (or peanut butter)
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
Optional Add-Ins
- ¼ cup chopped nuts (almonds, walnuts, or pecans)
- ¼ cup dried cranberries or raisins
- 1 tablespoon flaxseeds or chia seeds
- 2 tablespoons shredded coconut
Instructions
1️⃣ Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2️⃣ Mash the Bananas
- In a mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.
3️⃣ Mix the Ingredients
- Add oats, almond butter, maple syrup, vanilla extract, cinnamon, baking powder, and sea salt.
- Stir until everything is well combined into a thick dough.
4️⃣ Fold in the Chocolate Chips
- Gently mix in the chocolate chips and any optional add-ins.
5️⃣ Shape the Cookies
- Use a spoon or cookie scoop to drop small mounds of dough onto the baking sheet.
- Flatten slightly with the back of a spoon (these cookies won’t spread much).
6️⃣ Bake the Cookies
- Bake for 12-15 minutes, or until the edges are golden brown.
7️⃣ Cool & Enjoy
- Let cookies cool for 5 minutes before transferring them to a wire rack.
- Enjoy warm, or store for later!
