Ingredients
- 1 pound ground beef (preferably lean)
- 1 medium head of cabbage, chopped (about 4 cups)
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce (low sodium preferred)
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and sauté for about 2-3 minutes until translucent.
- Add the minced garlic and ginger to the skillet, stirring for another 1 minute until fragrant.
- Increase the heat to high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the beef is cooked through, drain any excess fat if necessary. Stir in the chopped cabbage and cook for another 5 minutes, stirring frequently until the cabbage is wilted.
- In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, sugar, black pepper, and red pepper flakes (if using). Pour this sauce over the beef and cabbage mixture, stirring well to combine. Cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and garnish with sliced green onions before serving.
Notes
- For a lighter version, substitute ground turkey or chicken for the beef.
- Add other vegetables like bell peppers, carrots, or snap peas for extra color and nutrition.
