A refreshing and healthy cucumber salad with bacon, perfect for a light meal or side dish.
Ingredients
- 2 large cucumbers, sliced thin
- 1 cup cherry tomatoes, halved
- 4 ounces cooked bacon, crumbled
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced cucumbers, cherry tomatoes, crumbled bacon, red onion, and parsley.
- In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, olive oil, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss gently to combine.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve cold and enjoy!
Notes
- For a vegetarian version, omit the bacon and add roasted chickpeas for crunch.
