  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced carrots to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften.
  4. Add the fresh spinach to the skillet, along with the salt, black pepper, and red pepper flakes if using.
  5. Sauté for an additional 2-3 minutes until the spinach is wilted and the carrots are tender.
  6. Remove from heat and stir in the lemon juice before serving.
