Description

Hearty Chicken and Sausage Cassoulet is a comforting dish that combines tender chicken, smoky sausage, and hearty beans in a flavorful broth, topped with crispy breadcrumbs.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same pot, add the sliced sausage and cook until browned, about 3-4 minutes. Remove and set aside with the chicken.
  3. Add the onion, garlic, carrot, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.
  4. Stir in the diced tomatoes, white beans, chicken broth, thyme, rosemary, bay leaf, and season with salt and pepper. Bring to a simmer.
  5. Return the chicken and sausage to the pot, cover, and let simmer for 30 minutes, stirring occasionally.
  6. Preheat the oven to 400°F. After 30 minutes, remove the bay leaf and sprinkle the breadcrumbs over the top of the cassoulet.
  7. Transfer the pot to the oven and bake for 15-20 minutes, or until the breadcrumbs are golden and crispy.
  8. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.

Notes

  • For a spicier version, add a pinch of red pepper flakes while sautéing the vegetables.
  • You can also substitute the chicken thighs with chicken breast for a leaner option.
