Description

This hearty and flavorful slow cooker chili is the perfect cozy comfort food. Made with seasoned ground beef, two kinds of beans, tomatoes, and bold spices, it simmers low and slow for deep, rich flavor. A true set-it-and-forget-it dinner hero for chilly nights and crowd-pleasing gatherings.


Ingredients

2 lb lean ground beef (90/10 or 93/7)
1 large onion, diced
3 garlic cloves, minced
2 tsp cumin powder
2 tbsp chili powder
1 tsp garlic powder
1 tsp dried oregano
1 ½ tsp salt, or to taste
½ tsp black pepper
15 oz black beans, drained and rinsed
2 cans (15 oz each) kidney beans, drained and rinsed
30 oz canned diced tomatoes with juice
10 oz diced tomatoes with green chilis, with juice
30 oz tomato sauce


Instructions

  • In a large skillet over medium-high heat, cook the ground beef for 4–5 minutes, breaking it apart as it browns.

  • Add diced onion and cook for another 4–5 minutes until softened. Stir in garlic, cumin, chili powder, garlic powder, oregano, salt, and black pepper. Cook for 30 seconds to bloom the spices, stirring constantly.

  • Transfer the seasoned beef mixture into a 6-quart slow cooker.

  • Add black beans, kidney beans, diced tomatoes, tomatoes with green chilis, and tomato sauce. Stir everything together until well combined.

  • Cover and cook on low for 6–8 hours or on high for 3–4 hours.

 

  • Taste and adjust seasonings as needed before serving. Serve hot with your favorite toppings like shredded cheese, sour cream, green onions, or tortilla chips.

Notes

This chili freezes beautifully—let it cool completely before storing in freezer-safe containers.
Customize the heat level by adjusting the chili powder or adding cayenne pepper.
To thicken the chili, leave the lid off during the last 30 minutes of cooking or mash some of the beans.
Top with avocado slices or cornbread croutons for added flair.
