Hearty Turkey Shepherd’s Pie is a cozy family favorite that combines ground turkey with mixed vegetables and a creamy mashed potato topping.
Ingredients
- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared from about 2 pounds of potatoes)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 400°F.
- In a large skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes.
- Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the mixed vegetables, thyme, rosemary, Worcestershire sauce, salt, and pepper. Cook for an additional 5 minutes until the vegetables are tender.
- Transfer the turkey mixture to a 9×13 inch baking dish, spreading it evenly.
- Top with the prepared mashed potatoes, smoothing them out with a spatula.
- If desired, sprinkle shredded cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
- Let it cool for 5-10 minutes before serving.
Notes
- For a creamier mashed potato topping, mix in 1/4 cup of sour cream or cream cheese before spreading it on the filling.
- To add a bit of spice, incorporate a teaspoon of hot sauce into the turkey mixture.
