Heaven on Earth Cake is a delightful dessert that combines the richness of butter, the sweetness of sugar, and the texture of coconut and pecans, creating a heavenly experience in every bite.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- Add the softened butter to the dry ingredients and beat on medium speed until the mixture is crumbly.
- In a separate bowl, whisk together the eggs, vanilla extract, and buttermilk. Gradually add this mixture to the flour mixture, beating until smooth and well combined.
- Fold in the shredded coconut and chopped pecans until evenly distributed.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Once cooled, frost with your favorite cream cheese frosting or whipped cream, and garnish with additional coconut and pecans if desired.
Notes
- For a chocolate version, substitute ½ cup of the flour with unsweetened cocoa powder.
- Add a layer of fresh fruit, such as sliced strawberries or peaches, between the cake layers for added flavor and freshness.
