Description

Heaven on Earth Cake is a delightful dessert that combines the richness of butter, the sweetness of sugar, and the texture of coconut and pecans, creating a heavenly experience in every bite.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  3. Add the softened butter to the dry ingredients and beat on medium speed until the mixture is crumbly.
  4. In a separate bowl, whisk together the eggs, vanilla extract, and buttermilk. Gradually add this mixture to the flour mixture, beating until smooth and well combined.
  5. Fold in the shredded coconut and chopped pecans until evenly distributed.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Once cooled, frost with your favorite cream cheese frosting or whipped cream, and garnish with additional coconut and pecans if desired.

Notes

  • For a chocolate version, substitute ½ cup of the flour with unsweetened cocoa powder.
  • Add a layer of fresh fruit, such as sliced strawberries or peaches, between the cake layers for added flavor and freshness.
