Ingredients
- 2 large ripe bananas, mashed (about 1 cup)
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup vegetable oil
- 1/2 cup chopped walnuts (optional)
- For the cream cheese filling:
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon milk
Instructions
- Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
- In a large mixing bowl, combine the mashed bananas, eggs, granulated sugar, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the baking powder, baking soda, salt, flour, and cocoa powder.
- Gradually add the dry ingredients to the banana mixture, mixing until just combined. Stir in the vegetable oil and walnuts if using.
- Pour the batter into the prepared jelly roll pan, spreading it evenly. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the cream cheese filling. In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and milk until smooth and creamy.
- Once the cake is done, remove it from the oven and let it cool in the pan for about 5 minutes. Then, carefully invert the cake onto a clean kitchen towel dusted with powdered sugar.
- Gently peel off the parchment paper. Starting from one short end, roll the cake up with the towel inside. Let it cool completely in this rolled shape for about 30 minutes.
- Once cooled, unroll the cake and spread the cream cheese filling evenly over the surface. Roll the cake back up without the towel and place it seam-side down on a serving platter.
- Slice and serve, or refrigerate for up to 2 hours before serving for a chilled treat.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the batter before baking.
- Substitute the walnuts with pecans or omit them entirely for a nut-free version.
