Description
A delicious and healthy flatbread made with zucchini and cottage cheese, perfect for a light meal or snack.
Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup cottage cheese
- 1 large egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
- In a separate bowl, mix together the cottage cheese, egg, flour, baking powder, garlic powder, oregano, and black pepper until well combined.
- Fold in the squeezed zucchini, mozzarella cheese, and Parmesan cheese until evenly distributed.
- Spread the mixture onto the prepared baking sheet, shaping it into a flatbread about 1/2 inch thick.
- Brush the top lightly with olive oil for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
- Allow to cool for a few minutes before slicing into squares or wedges.
Notes
- For a spicier version, add 1/4 teaspoon of red pepper flakes to the batter.
- You can substitute the all-purpose flour with whole wheat flour for added fiber.
- Enjoy with your favorite dipping sauce or fresh herbs on top!
