Description

A delicious and healthy flatbread made with zucchini and cottage cheese, perfect for a light meal or snack.


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup cottage cheese
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.
  4. In a separate bowl, mix together the cottage cheese, egg, flour, baking powder, garlic powder, oregano, and black pepper until well combined.
  5. Fold in the squeezed zucchini, mozzarella cheese, and Parmesan cheese until evenly distributed.
  6. Spread the mixture onto the prepared baking sheet, shaping it into a flatbread about 1/2 inch thick.
  7. Brush the top lightly with olive oil for a golden finish.
  8. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
  9. Allow to cool for a few minutes before slicing into squares or wedges.

Notes

  • For a spicier version, add 1/4 teaspoon of red pepper flakes to the batter.
  • You can substitute the all-purpose flour with whole wheat flour for added fiber.
