Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 1 cup mascarpone cheese
  • 1 tablespoon sumac
  • 1 teaspoon lemon zest
  • 1/2 teaspoon black pepper
  • 2 cups heirloom tomatoes, sliced
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish
  • Flaky sea salt for finishing

Instructions

  1. In a large bowl, combine the flour and salt. Add the chilled, diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough comes together. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. In a small bowl, mix the mascarpone cheese, sumac, lemon zest, and black pepper until well combined.
