Description
Heirloom Tomato Galette with Mascarpone and Sumac is a delightful savory pastry that combines the rich flavors of heirloom tomatoes with creamy mascarpone and a hint of tangy sumac.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 1 cup mascarpone cheese
- 1 tablespoon sumac
- 1 teaspoon lemon zest
- 1/2 teaspoon black pepper
- 2 cups heirloom tomatoes, sliced
- 1 tablespoon olive oil
- Fresh basil leaves for garnish
- Flaky sea salt for finishing
Instructions
- In a large bowl, combine the flour and salt. Add the chilled, diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, mixing until the dough comes together. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the mascarpone cheese, sumac, lemon zest, and black pepper until well combined.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.
- Spread the mascarpone mixture evenly over the dough, leaving a 2-inch border around the edges.
- Arrange the sliced heirloom tomatoes on top of the mascarpone. Drizzle with olive oil and sprinkle with flaky sea salt.
- Fold the edges of the dough over the tomatoes, pleating it as necessary to create a rustic look.
- Bake for 30-35 minutes or until the crust is golden brown and the tomatoes are tender.
- Remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
Notes
- For added flavor, try mixing in some fresh herbs like thyme or oregano into the mascarpone mixture.
- Substitute the heirloom tomatoes with other seasonal vegetables like zucchini or bell peppers for a different twist.
