A delicious Herb and Garlic Meatloaf topped with a flavorful Garlic Butter Sauce, perfect for a comforting meal.
Ingredients
- 1 pound ground beef
- 1 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped onion
- 3 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 cup unsalted butter (1 stick)
- 4 cloves garlic, minced (for sauce)
- 2 tablespoons chopped fresh parsley (for sauce)
- 1 tablespoon lemon juice (for sauce)
- Salt and pepper to taste (for sauce)
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, parsley, basil, onion, garlic, eggs, salt, pepper, oregano, thyme, and paprika. Mix until just combined; do not overmix.
- Transfer the meat mixture to a loaf pan and shape it into a loaf.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
- While the meatloaf is baking, prepare the garlic butter sauce. In a small saucepan over medium heat, melt the butter.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the chopped parsley, lemon juice, and season with salt and pepper. Remove from heat and set aside.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve slices drizzled with the garlic butter sauce.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the meat mixture.
- Substitute ground turkey or chicken for a lighter version of the meatloaf.
