Description

A delicious Herb and Garlic Meatloaf topped with a flavorful Garlic Butter Sauce, perfect for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped onion
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves garlic, minced (for sauce)
  • 2 tablespoons chopped fresh parsley (for sauce)
  • 1 tablespoon lemon juice (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, parsley, basil, onion, garlic, eggs, salt, pepper, oregano, thyme, and paprika. Mix until just combined; do not overmix.
  3. Transfer the meat mixture to a loaf pan and shape it into a loaf.
  4. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, prepare the garlic butter sauce. In a small saucepan over medium heat, melt the butter.
  6. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  7. Stir in the chopped parsley, lemon juice, and season with salt and pepper. Remove from heat and set aside.
  8. Once the meatloaf is done, let it rest for 10 minutes before slicing.
  9. Serve slices drizzled with the garlic butter sauce.

Notes

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the meat mixture.
  • Substitute ground turkey or chicken for a lighter version of the meatloaf.
