Herbed Ricotta Stuffed Chicken Rolls are a delicious and flavorful dish featuring chicken breasts stuffed with a creamy herbed ricotta mixture, baked to perfection.
Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup marinara sauce
- 1 tablespoon olive oil
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat the oven to 375°F.
- Slice each chicken breast in half horizontally to create thin cutlets. Place the chicken cutlets between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.
- In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, basil, parsley, garlic powder, salt, and black pepper. Mix until well combined.
- Spread a generous tablespoon of the cheese mixture onto each chicken cutlet, then roll the chicken tightly from one end to the other. Secure each roll with toothpicks or kitchen twine.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the chicken rolls and sear them for about 3-4 minutes on each side until golden brown.
- Pour the marinara sauce over the chicken rolls and sprinkle with Italian seasoning.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let rest for 5 minutes before removing toothpicks or twine. Slice and serve warm.
Notes
- For a lighter version, substitute part-skim ricotta and mozzarella cheese.
- You can also add spinach or sun-dried tomatoes to the cheese mixture for extra flavor.
- For a crispy finish, broil the chicken rolls for an additional 2-3 minutes after baking.
