Ingredients
For the Yum Yum Sauce:
- 1 cup mayonnaise
- 3 tbsp ketchup
- 2 tbsp sriracha (adjust for spice level)
- 1 tsp paprika
- 1 tbsp mirin
- ½ tbsp garlic powder
For the Chicken:
- 1 tbsp olive oil
- 1 tbsp butter
- 8–10 boneless, skinless chicken thighs (diced)
- Salt and pepper (to taste)
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp mirin
- 2 tbsp minced garlic
- 1 tbsp honey
For the Vegetables:
- 1 tbsp olive oil
- ½ tbsp butter
- ½ onion (sliced)
- 227g mushrooms (quartered)
- 1–2 zucchini (sliced)
- 1 tbsp soy sauce
For the Fried Rice:
- 1 tbsp butter
- 1 tbsp minced garlic
- 3 cups cooked rice (preferably day-old)
- 2 eggs (beaten)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
1 cup frozen peas
Instructions
1. Make the Yum Yum Sauce:
- In a small bowl, mix mayonnaise, ketchup, sriracha, paprika, mirin, and garlic powder.
- Stir until smooth. Chill in the fridge until ready to serve.
2. Cook the Hibachi Chicken:
- Heat olive oil and butter in a large skillet or wok over high heat.
- Add chicken thighs, season with salt and pepper, and cook for 5-6 minutes until fully cooked.
- Add soy sauce, hoisin sauce, mirin, garlic, and honey. Cook for 2-3 minutes, letting the sauce thicken and coat the chicken. Set aside.
3. Stir-Fry the Vegetables:
- In the same skillet, heat olive oil and butter.
- Add onions, mushrooms, and zucchini. Stir fry for 1-2 minutes.
- Add soy sauce and cook until vegetables are tender. Set aside.
4. Make the Fried Rice:
- Melt butter in the skillet and sauté garlic for 30 seconds.
- Add the rice, soy sauce, and oyster sauce. Stir to combine.
- Push the rice to one side and scramble the eggs in the empty space. Mix the eggs into the rice.
- Stir in frozen peas and cook until heated through.

- Use day-old rice for fried rice to avoid a mushy texture.
- Cook on high heat for the best sear and flavor.
