Ingredients
- 2 medium zucchinis, sliced into half-moons
- 1 cup bell peppers, sliced (any color)
- 1 cup mushrooms, sliced
- 1 small onion, thinly sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onions and cook for about 2 minutes until they start to soften.
- Stir in the garlic and ginger, cooking for an additional 30 seconds until fragrant.
- Add the sliced zucchinis, bell peppers, and mushrooms to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
- Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly. Cook for another 2 minutes.
- Season with salt and pepper to taste. Remove from heat and sprinkle with sesame seeds if desired.
- Serve immediately as a side dish or over rice for a complete meal.
