Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1 cup carrots, thinly sliced
  • 1 cup snap peas
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
  3. Add the broccoli, bell peppers, carrots, and snap peas to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender-crisp.
  4. In a small bowl, mix the soy sauce, cornstarch, and chicken broth until smooth. Pour this mixture over the vegetables in the skillet.
  5. Return the cooked chicken to the skillet and stir everything together. Cook for an additional 2-3 minutes until the sauce thickens. Drizzle with sesame oil before serving.
  6. Serve hot over cooked rice or noodles.
