Description

A simple and delicious recipe for homemade chicken taquitos, perfect for a quick meal or snack.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn tortillas
  • Vegetable oil for frying
  • Sour cream and salsa for serving

Instructions

  1. In a large bowl, combine the shredded chicken, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Mix until well combined.
  2. Heat a skillet over medium heat. Lightly warm the corn tortillas in the skillet for about 30 seconds on each side to make them pliable.
  3. Spoon about 2 tablespoons of the chicken mixture onto one end of each tortilla. Roll tightly and secure with a toothpick if necessary.
  4. In a large frying pan, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully add the taquitos, seam side down. Fry for 3-4 minutes on each side or until golden brown and crispy.
  5. Remove the taquitos from the oil and place them on a paper towel-lined plate to drain excess oil.
  6. Serve hot with sour cream and salsa on the side.

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the chicken mixture.
