A simple and delicious recipe for homemade chicken taquitos, perfect for a quick meal or snack.
Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 small corn tortillas
- Vegetable oil for frying
- Sour cream and salsa for serving
Instructions
- In a large bowl, combine the shredded chicken, cheddar cheese, cream cheese, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Mix until well combined.
- Heat a skillet over medium heat. Lightly warm the corn tortillas in the skillet for about 30 seconds on each side to make them pliable.
- Spoon about 2 tablespoons of the chicken mixture onto one end of each tortilla. Roll tightly and secure with a toothpick if necessary.
- In a large frying pan, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully add the taquitos, seam side down. Fry for 3-4 minutes on each side or until golden brown and crispy.
- Remove the taquitos from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with sour cream and salsa on the side.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce to the chicken mixture.
- Substitute the chicken with shredded beef or black beans for a vegetarian option.
