Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder

  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 4 slices cooked bacon or sausage patties
  • 4 slices American cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Gently fold in the maple syrup, ensuring it’s evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about halfway.
  7. Place a slice of bacon or a sausage patty on top of the batter in each cup, followed by a slice of cheese.
  8. Top each muffin with the remaining batter, covering the meat and cheese completely.
  9. Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
