Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 4 large eggs

- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, salt, and cinnamon. Mix well.
- In another bowl, whisk together the vegetable oil, eggs, vanilla extract, and buttermilk until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the shredded coconut, chopped pecans, and crushed pineapple until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
- While the cake is cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until creamy.
- Gradually add the powdered sugar, mixing until smooth. Stir in the vanilla extract and milk until the frosting reaches your desired consistency.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
- Serve immediately or refrigerate for up to 3 days.
