Description
A refreshing and crunchy slaw made with apples, cabbage, and a honey chili dressing.
Ingredients
- 2 medium apples, cored and thinly sliced
- 1 cup green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 carrot, grated
- 1/2 cup walnuts, chopped
- 1/4 cup raisins
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, combine the sliced apples, green cabbage, red cabbage, grated carrot, walnuts, and raisins. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, chili powder, salt, and black pepper until smooth and well combined.
- Pour the dressing over the slaw mixture and toss until all the ingredients are evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional walnuts if desired.
Notes
- For added crunch, consider including sunflower seeds or pumpkin seeds.
- To make it spicier, increase the chili powder or add a pinch of cayenne pepper to the dressing.
