Description

A refreshing and crunchy slaw made with apples, cabbage, and a honey chili dressing.

Ingredients

  • 2 medium apples, cored and thinly sliced
  • 1 cup green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 carrot, grated
  • 1/2 cup walnuts, chopped
  • 1/4 cup raisins
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine the sliced apples, green cabbage, red cabbage, grated carrot, walnuts, and raisins. Toss gently to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, chili powder, salt, and black pepper until smooth and well combined.
  3. Pour the dressing over the slaw mixture and toss until all the ingredients are evenly coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled, garnished with additional walnuts if desired.

Notes

  • For added crunch, consider including sunflower seeds or pumpkin seeds.
  • To make it spicier, increase the chili powder or add a pinch of cayenne pepper to the dressing.
