A delicious and healthy side dish featuring roasted sweet potatoes glazed with honey, topped with creamy goat cheese and crunchy walnuts.
Ingredients
- 2 large sweet potatoes (about 1.5 pounds), peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1/4 cup honey
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces goat cheese, crumbled
- 1/2 cup walnuts, chopped
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sweet potato cubes, olive oil, honey, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
- Remove the sweet potatoes from the oven and let them cool for 5 minutes.
- Transfer the sweet potatoes to a serving dish and sprinkle with crumbled goat cheese and chopped walnuts.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potato mixture before roasting.
- You can substitute pecans for walnuts for a different flavor profile.
