Ingredients

  • 2 large sweet potatoes (about 1.5 pounds), peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/2 cup walnuts, chopped
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the sweet potato cubes, olive oil, honey, cinnamon, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
