Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing on low speed until just incorporated. Finally, mix in the sour cream until smooth.
- Pour the cheesecake filling over the cooled crust and spread it evenly. Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, or overnight.
- For the hot fudge topping, combine chocolate chips and heavy cream in a small saucepan over low heat. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.
- To serve, slice the cheesecake and drizzle with warm hot fudge topping.
