A delicious and spicy Hot Honey Chicken Bowl featuring tender chicken thighs, jasmine rice, and fresh vegetables, drizzled with a sweet and spicy hot honey sauce.
Ingredients
- 2 cups cooked jasmine rice
- 1 pound boneless, skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1/4 cup hot honey
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 cup shredded green cabbage
- 1/2 cup sliced cucumbers
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the jasmine rice according to package instructions and set aside.
- In a bowl, season the chicken thighs with salt, black pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and cook for about 5-7 minutes on each side, or until fully cooked and golden brown.
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
- In a small bowl, mix together the hot honey, mayonnaise, and lemon juice. Adjust the sweetness to taste.
- To assemble the bowls, start with a base of jasmine rice, then add the sliced chicken, shredded cabbage, sliced cucumbers, and top with green onions and cilantro.
- Drizzle the hot honey sauce over the top and serve immediately.
Notes
- For a spicy kick, add sliced jalapeños or a sprinkle of red pepper flakes.
- Swap out the chicken thighs for grilled shrimp or tofu for a different protein option.
