A delicious and moist apple cake that is perfect for any occasion.
Ingredients
- 3 cups peeled and diced apples (about 3 medium apples)
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the diced apples, granulated sugar, and brown sugar. Stir well and let sit for about 10 minutes to release some juices.
- Add the vegetable oil, eggs, and vanilla extract to the apple mixture. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chopped nuts.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
Notes
- For added flavor, try mixing in 1/2 teaspoon of nutmeg or using a mix of different apple varieties.
- Serve the cake warm with a scoop of vanilla ice cream for a delicious dessert.
