Description

A cozy and hearty Irish Bacon, Cabbage, and Potato Soup that combines the rich flavors of bacon with tender cabbage and potatoes.


Ingredients

  • 6 ounces Irish bacon or thick-cut bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, peeled and diced
  • 4 cups green cabbage, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil. Add the diced potatoes, thyme, black pepper, and salt. Reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  4. Stir in the chopped cabbage and cook for another 5-7 minutes until the cabbage is wilted and tender.
  5. Reduce the heat to low and stir in the heavy cream. Add the reserved bacon back into the pot and heat through for 2-3 minutes.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • Add a splash of apple cider vinegar before serving for a tangy twist.
