Description
A cozy and hearty Irish Bacon, Cabbage, and Potato Soup that combines the rich flavors of bacon with tender cabbage and potatoes.
Ingredients
- 6 ounces Irish bacon or thick-cut bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 medium potatoes, peeled and diced
- 4 cups green cabbage, chopped
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.
- Add the chopped onion to the pot and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil. Add the diced potatoes, thyme, black pepper, and salt. Reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the chopped cabbage and cook for another 5-7 minutes until the cabbage is wilted and tender.
- Reduce the heat to low and stir in the heavy cream. Add the reserved bacon back into the pot and heat through for 2-3 minutes.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add a splash of apple cider vinegar before serving for a tangy twist.
